Courgette, thyme and walnut salad

Great infused oil idea, Yotam! It also works with dried thyme (but add less, because it’s stronger). If basil is off season, try with any other herb.

Cashews or almonds work great as well. If your courgettes are large, cut the shaved ribbons in half and sideways to make it easier to eat. Serve immediately. Raw!
